As black tea is still the beverage of choice many people become aware of health benefits the green tea leaf can offer. During fermentation the chemical structure of the tea leaf is altered.This results in the loss of some antioxidant properties. Japanese, Darjeeling and some Chinese teas are produced by picking young tea leaves that are processed by whitering , steaming or pan firing followed by drying and grading (sifting) before the tea is packaged and exported. Many Chinese teas are pan fired over smoke in order to stop the natural enzymes from fermenting the leaf. Smoke - a flavoring agent is also a carcinogen.
